Things I made today.

Tuna and tilapia ceviche
Fried plantains and bananas
Cancha (Andean toasted corn)
Potatoes
Rice
Hearts of Palm salad

It doesn’t sound like much, but it recreated several meals we had while traveling around Perú, and while simple, is also simply good food.

Yay leftovers for dinner!

    How’d you prepare the potatoes?

    Heh. I boil’t ‘em. That’s about the only way we ever had potatoes in Perú – boiled or fried.

    Ahhh, the beauty of it was how simple it was:

    Equal parts of tuna and tilapia, cut into small chunks
    Red onion in the proportion you prefer – I used about one large onion for about a pound and a half of fish
    Cover with lemon juice.
    Salt and pepper to taste, add other herbs as your whim moves you.

    Time consuming, yes, but simple and delicious!

    Oh, it’s so easy! Shredded hearts of palm, diced red and yellow bell peppers, thinly sliced onions, and some white wine vinegar to taste.
